    Good to know it seems that I'm brewing more of a belgium style than a saison then... the description on wyest site made me think it would pair well with amarillo, nelson, rye and some strawberries but now Im thinkin twice about that.

    Good to know looks like I will keep to cascade and use the lemon drop hops in something different. I was thinking of doing a spin on a kolsch so maybe I do late hop additions with them along some meyer lemon zest a touch of thyme and lavender. Thanks again.

    I mashed at 150, I've been fermenting at around 63. I'm at about 72 hrs, fermentation with the s-04 seems to be slowing down so I bumped it to 65. Anyone else get pretty potent bumblegum/nectarine smell from their ferm cabinet? I did not read any racking to the secondary so I'm dry hopping...
