    So, I have 5gal of an 8.8% stout that I added 3 cups of a 99proof liquor to before bottling. Does anyone know how to determine an approx abv%???

    Okay...thx. First time for dry hopping and my homebrew shop told me it didn't matter. I used 2oz dried whole leaf Columbus hops. To me, it already taste incredible right out of the secondary....go figure.

    Hey thanks...I don't have my notes handy but I know I used some Whitelabs in the beginning along with a repitch of some champagne yeast. I know now I must make starters for brewing these BIG beers from now on.

    Yeah no doubt....but, like my barley wine I'm afraid to bottle it. My barley wine taste awesome but I'm unsure about bottling it at 1.04. Og was 1.124. I'm just not kegging yet....still bottling.

    I've had a barley wine dry hopping for a couple months that I brewed on 12/7/11 with a 1.124 og. It taste incredible!...problem is it stalled out at 1.04 fg. Would it be okay to bottle??? I'm not kegging yet.

    I'm not questioning...just trying to understand. I've been thinking I'm losing so much due to overflow that pitching more would just mean more overflow. It seems like when I repitch after a couple weeks the high alchohol kills my repitched yeast and I still can't get the final gravity down...

    So, that's what I don't quite get. This beer overflowed for over 8 hrs and I should have pitched more? I've brewed about 10 extracts this past year and when I go for more gravity I blow the airlock, make a big mess and can't get my final gravity down.

    I didn't use a starter. I used one test tube like vial of liquid Whitelab. I brewed it on 2/23.
