    I think a lot would depend on the insulation of your fermentation chamber you make.     From my knowledge, no harm in letting the beer sit in the keg, but I would add co2 and try and purge the air as much as possible. You could purge the air and blast with 30psi then just let it sit. You'll get some carbonation, but not much since it'll be a ferm temp without constant pressure...

    I just did 48 hrs at 30 psi and it was cold crashed as well, but I haven't drawn anything from the keg yet so I'm of no help. I've done this before and it's been fine though.

    I bottled a chocolate milk stout and have a similar issue. The brewers best packets are 5 oz of sugar and I assume this was too much.     I bought these. They are a lot more durable than some of them you get at Target or WalMart. http://www.containerstore.com/shop?productId=10000531&N=&Ntt=crate You can fit 25 in a crate. Very strong and easy to stack.

    I believe that Co2 is heavier than oxygen as well so the co2 would settle below the oxygen keeping them out of contact. I think....

    Secondary does not usually have fermentation. All of the sugars normally fermented out during the primary. Secondary is to allow the yeast to "clean up" and particles to settle and help clear the beer. I assume you had it in primary for a couple weeks? As far as adding the 2nd pack of yeast...

    Also the warmer it is the easier the co2 will come out of solution....I believe.

    Also need to make sure the valve is open from the regulator if you have a valve. You can show whatever PSI and a full tank, but if the valve isn't open, you aren't actually getting any Co2 to the keg itself.
