ESB - How does it look?

I have been researching ESBs and I would like to brew one. This is a rough draft of the recipe. Is 9% specialty malts too much? Also, I know that caramel malts can be traditional, but I despise them so they aren't going into this recipe. Recipe: ESB Brewer: me Asst Brewer: Style: Extra...

    Low attenuation please

Why not adjust your mash temp? 156°F should leave you with a higher FG in the end.

It turned out fantastic. A nice pale beer with good head. Spritzy and refreshing. Citrus fruit notes and good body.

    INISBC 003 Colorado IPA Yeast

Just brewed an APA on 8/15 using this strain. Awesome results. Fruity flavors that accentuate the Amarillo and Cascade hops. Fermented from 1.050 to 1.011. Still hazy pours coming from the keg even after a 1 week cold crash with gelatin in the fermenter.

INISBC 913 Brett Barrel Yeast III

It finished at 1.008 and is now kegged. It is fruity with some tartness.

INISBC 913 Brett Barrel Yeast III

So 3+ months down the line the tropical fruit is totally gone. It leaves a thin, bitter beer. Very little funk. I will keep some around for another 6 months or so and periodically sample to see if funk develops and makes it more interesting again. As it is now, it is not pleasant to drink at...

INISBC 913 Brett Barrel Yeast III

Brewed an APA on 8/15/2015. The fermentation is still ongoing, which is no surprise as the American Sours book says that brett fermentations can take 21 days to complete. It is already under 1.010 from 1.050. Tastes incredibly tropical fruity. Hops are Amarillo and Cascade.

    Vieille harvest dregs

So my saison with Vieille dregs is tasting pleasantly sour and delicious. The gravity is stable, so I will probably bottle soon at 2.8 or 2.9 vols just in case.

time for a burner upgrade...what to buy?

I own the bayou classic KAB 6. 210,000 btu is more than enough to get the job done. I also do 10 gallon BIAB and I have done 3 batches on one full tank of propane so far. Price compared to blichmann is much cheaper
