    Gumbo

Actually the word "gumbo" means okra in a language in west Africa, where the origins of the dish can be traced to. I grew up in western LA and have always preferred gumbo with okra, although I know a few people in the northern part of the state that just put celery, chicken and sausage, and roux...

What style of beer for fennel seed?

Wow, I like the sound of a rye ale with fennel seed. :mug:

What style of beer for fennel seed?

That sounds like quite a beer. Now I'll need to go out and inventory the seeds on my fennel plants as I could see bottling something interesting like a porter with fennel, but would still like to add some to a wheat (or possibly a blonde as suggested by HexKrak). The thought of this with smoked...

What style of beer for fennel seed?

I could toast them. That would probably do well as I like their flavor baked onto bread. I would keep hops minimal - I agree it would clash in flavor. A google search shows many beers with anise, but I didn't find Papazian's. Did you find it in one of his books? I did find reference to...

What style of beer for fennel seed?

I looked at the recipe on the link you posted - that does sound pretty interesting. Fennel stem does taste a lot like anise but the seeds are milder and aren't as sweet. I was originally envisioning something light in color. At first I thought a wheat and have since thought that maybe a biscuity...

What style of beer for fennel seed?

So near the end of last summer I used some of the seeds from my fennel plants to top a couple loaves of bread and really liked the flavors together. I decided then that I should try to infuse a beer with this flavor this year. Now that we are nearing the end of summer I'm seriously...

Origins of Lager Yeast Discovered - Awesome

Here is another article about eubayensis on a news website that I monitor. It has the same information but is presented in an archaeological context. http://www.archaeologydaily.com/news/201108257127/500-years-ago-yeasts-epic-journey-gave-rise-to-lager-beer.html

    Earthquake

I'm in Chapel Hill, 2nd story office. I thought someone was jumping up in down in the next room and I watched my monitor sway for about 20 seconds. Nothing by your CA standards, but for us Louisiana folks....!

Origins of Lager Yeast Discovered - Awesome

Wow, you beat me to it. I just posted the same story from Sciencedaily in the Yeast forum. http://www.sciencedaily.com/releases/2011/08/110822151019.htm

Scientific article on the origin of lager yeast

I ran into this article on the results of a research team's efforts to find the origins of lager yeast and I decided to share it. It's part history, part genetic sleuthing, and results you can taste. I love this stuff. http://www.sciencedaily.com/releases/2011/08/110822151019.htm It's...

    Head Dissolves into floating...Clumps...?

I have an IPA that did the same. I kegged half and bottled half and only remember the bottles doing this. Kegs were force carbonated and bottles maybe a little over carbed using dextrin. I wondered if it wasn't the hop oils since it was heavily dry hopped, but I guess since yours probably aren't...

    Store brand beer

I fully agree with Revvy- Trader's Vienna Lager is the best example of the style I've had. And you can't beat less than $7 per sixer

    Store brand beer

This seems to be a recent trend. Walgreen's recently released plans to sell their own beer, called "1901". As The Onion put it, "1901 was a good year for really sh***y beer". Trader Joe's and, more recently, Whole Foods have contracted the production of their own brews through small...

    My First Bottle Bomb

A few minutes ago I heard a loud *pop* behind me here in my home office and investigated. Turns out it was a 22oz that the bottom popped off of, very similar to passedpawn's pic. This was an IPA brewed four months ago of which there are only about 8 bottles left, and they were on the top of my...

Foam pouring out of the bottle straight after opening...

I once had this problem and it didn't go away - even after several months of bottle conditioning they would gush immediately upon opening. I finally concluded that I either had an infected beer or possibly there was a fulsarium infection of the malt. Definitely put them in a safe place.
