    I just recently used this method on an APA that I dry hopped with pellet hops. Worked like a charm. I had no hop particulate in the bottling bucket.

    +1. I have made a Kölsch twice and the one with the liquid yeast (Wyeast 2526) was significantly better. Spend the extra few dollars and get the liquid yeast, then harvest it for future use, if you want to cut cost.

    I have had great results using a Brita pitcher. As a previous poster noted, it takes quite a while to prepare 7 gallons of water using the pitcher, but I just plan ahead and it's no big deal.

    Wait, you have the Wyeast Activators, right? Isn't the point of the activator to be able to check the viability of the yeast? Let it warm up to room temperature, smack it, wait 3-4 hours and if it swells, your yeast are fine. Or am I missing something? :drunk:

    I had the same situation with one particular smack pack and had nary a problem. I wouldn't sweat it.

    Wyeast Kolsch slow to start?

    I've used that yeast strain and had a nise krausen within 24 hours. My pitching temperature was 65, though, so that may explain the faster start. I'd give it a little more time.

    Same thing here. I soak and clean the bucket with Oxiclean, but there is still some faint coloration and residual hop aroma. Hasn't made a bit of difference in any of my beers.

    The picture looks fine to me - I wouldn't sweat an infection. Some yeast strains will pull this stopping/starting behavior, such as Wyeast's 3724 Belgian Saision, so this isn't completely unheard of. Which yeast did you use? Check the information at the lab's website.

    StarSan on plastic

    The only problem I've noticed with plastic is that Starsan can cause clear plastics to get a hazy look if you let them soak for long periods of time. This happened to some of my siphon tubing, but there were no performance issues. I wouldn't sweat it.
