    How long to wait before re-pitching

    I have almost made the same mistake but waited it out and all went well. It is nerve wracking (I am only 5 brews deep) waiting but I agree with the hydrometer approach. I guess it could have been worse than a quart!

    I may have missed it but what is the trouble if you ferment at a bit higher temp? I start in my upstairs closet, temp of 74-76 after pitching. By am it drops to 72-74 and within 12 hours I am rolling and never surpass the 72 mark and within days sit at 68. For my secondary I hit the basement...

    Fermentation can take 24 to 72 hrs to show visible signs.

    1st post so please take it easy on me as this is my first time brewing as well. Brewed Thursday night, fermentation began next day (within 12 hours) and we were off to the races. It's now Monday night and the airlock hiccups every 25 seconds which is a drop from the 15 seconds the day before...
