IMO, one lb. of lactose in a 5gal. batch is not enough in a Stout. I think if you up it to 1.5lbs. you'll notice a difference. I did and it improved the mouthfeel.

It's one of the best examples of a Dortmunder available. It is even listed as an example in the BJCP guidelines. I have a pretty close recipe I should post. Will try and do that this weekend.

Got an American Pale Ale that's on day 13 and will likely not finish completely for 4-7 more days. And this was pitched on top of a very healthy yeast slurry. No worries. Hefe's generally ferment out pretty fast, but yeast and temp come into play.

Wow, that's cool! Thanks. If I had a Doc Brown DeLorean Time Machine, I'd travel back just to try beers from different eras to see how they really tasted back then. This is one I'd seek out. Looking to brew this mid-summer.
