    What should I brew tomorrow?

Went with the Dunkel today. Nailed my mash temp a 152 for the full 60 minutes for the first time ever. Approaching 5 minutes left in the boil, pre-boil efficiency was registering at >80% for the first time ever. For someone whom does a mash-in-the-bag this is EXCELLENT! Thanks to Brewmaster's...

    What should I brew tomorrow?

Moose drool brown ale clone, wit, or a dunkel? I can't decide...

Witbier: Standard Additions for Orange & Corriander?

Here's what I roll wit: 0.5oz Coriander and 0.25oz Sweet Orange Peel at 5 minutes left in the boil. Then, at roughly 2 weeks I rack to secondary along with 0.5oz Coriander. The aroma and taste profile is comparable to Hoegaarden or Allagash White.

    Dunkle Weiss advise

I just racked my Hefewiezzen from primary to secondary. It was fermented with WLP300 yeast and had a very strong banana aroma during fermentation and when I took the first sample 3 weeks ago. After 4 total weeks in primary, the sample I took today had a much more subtle banana in it. I pitched...

Yeast, what's in your fridge? Any experimental combinations?

One jar washed WLP028, vial of WLP575, and WLP300 in primary that needs washed. Would love to get some Bell's yeast strain to make an Oberon clone for summer. Don't they use the same strain for all or most of their beers?

Secondary Fermenter- Too late to do it or not?

Wait! 2-3 days is way too early. Secondary is used almost exclusively for clarity and additions (orange peels, wood chips, hops, etc.). Keep your fermentation in primary so as not to introduce outside elements that could ruin the beer. At a minimum I give every beer 2 full weeks before racking...

    Candy Corn Beer Label

Awesome label. Maybe you should shoot for a two beer combo to achieve the visual affect - e.g. a Black and Tan.

    Blue Moon Grand Cru

I enjoy the regular Blue Moon offering quite often when out with the family. It's readily accessible in all the chain places they like. It's infinitely sweeter than all the other Belgians I like but I have a sweet tooth. I just did not like the Grand Cru, at all.

    Blue Moon Grand Cru

I like Blue Moon but I hated the grand cru. Way too expensive for the quality

What Water Profile for a Hefeweizen

Buying hops in bulk...which varieties to choose?

I bought 8 one pound bags of hops from hopsdirect.com for $92 including tax and shipping this fall. They were: columbus chinook cascade fuggles saaz willamette liberty and magnum. There's a lot of variety for aa cheap price. If I had to pick four it would be cascade liberty fuggles and...

Can't I just use a grain bag in a cooler?

I mash in my bottling bucket with the grain in a mesh bag. Temp holds very when the bucket is wrapped or covered in heavy blankets. My latest batch got a 76% efficiency but I didrequest an extra fine crush

I like the text positioning a ton better. I actually like the font you used before too. Can you get the photo any crisper?

What Water Profile for a Hefeweizen

The ambient floor temperature of my pantry is a steamy 67 degrees. I have no idea what my bucket temp was during fermentation. My ******* put the temp strip on the bottling bucket a year ago when I was greenhorn. I haven't been motivated to buy and apply new strips. Probably should start...

What Water Profile for a Hefeweizen

Just tried a sample from the bucket and it's quite wonderful! The aroma is a little muted right now but those banana and clove characteristics were shining through. One of the best samples I've had. Great pale, lightly cloudy color. The gravity is sitting at 1.015 right now which is well within...

What Water Profile for a Hefeweizen

Going to change from a blowoff tube to airlock tonight. Will take a sample and let you know how it's doing. Note: I'm terrible at evaluating samples.

    Please critique

I like the intent but two things. 1) The photo itself seems exceptionally blurry. Would prefer the photo to be crisp, clean and refreshing... like a summer ale would be imo. 2) Move Port City Brewing above the bird, enlarge and bold. Looks like the bird is crappy your name. Not the best of...

What Water Profile for a Hefeweizen

Your Hefe sounds very traditional and very good. Would be interesting to compare them someday.

What Water Profile for a Hefeweizen

I use the BrewPal iPhone App. 7# Wheat 2.75# Pilsen .33# Belgian Aromatic (the crush was very course on this as I had to do it at home with a mallet) 90 minute mash at 150, double batch sparge at 178. 1oz Liberty at 60 min .25oz Liberty and .25 Chinook at 15 min. WLP300 Pre-boil OG: 1.047...

What Water Profile for a Hefeweizen

I brewed a Hefe on friday too. I just take my tap water and add 1/2 campden tablet and tablespoon of 5.2 ph stabilizer to the mash. This is my first attempt at a Hefe. Next year, my goal is to better match water profiles. The SRM for my recipe is 3.5 and I'm using WLP300 to really bump up the...
