    Dunkles Weissbier Dunkelweizen

After a week of bottle conditioning and carbonation this beer is looking to be one of my best if not the best of my brews. Will check back in another two weeks but I like it!

Witbier Hoegaarden Witbier Clone - Pierre Celis White

I brewed this on Friday. Nailed the OG of 1.047 but TOTALLY FORGOT to add the coriander and orange peel at the 5 minute mark. I decided to toss them both into a hop bad and then into the primary fermenter. Not sure how that is gonna turn out but I suspect fine. Wyeast 3944 is slowly chugging...

    Adding Orange Peel to Fermenter

Yesterday, I totally forgot to add .5 oz Coriander and .25 bitter orange to the last 5 minutes of boil to my Wit recipe. After about 2 pitchers of Sangria I decided to toss those into a hop bag and then add that to my primary fermentation. I have no idea what is going to happen. Probably should...

Pitching past White Labs 'best buy' date.

Last December, I pitched a month over vial of WLP300 onto a Hefe with no problem. Took a bit over 20 hrs to start fermentation but once it did it chugged along. Ended up around 1.013 which is the higher end of the spectrum for a German Weiss, still acceptable.

    Dunkles Weissbier Dunkelweizen

Although I haven't tried to cold crash with a Dunkel before, from what I have read you most certainly can do it successfully. This guy did a 7 day cold crash (https://www.homebrewtalk.com/f70/erdinger-dunkelweisen-clone-146651/) for an Edinger Dunkel clone. Three weeks in primary and an...

    Dunkles Weissbier Dunkelweizen

I've noticed this with the bottled bottles of Hefe I brewed with the wlp300. However, they have only been carbing for about 10 days now. Will give it a few weeks more before pulling another sample. I'm going to cold crash the Dunkel for one day next weekend, then bottle after bringing it back...

Scottish 80 NB vs AHBS and Dry vs Liquid yeast

Thanks for those tips. I wasn't happy with my first attempt at a Scottish Ale and these modifications sound like the right path for me. Do you think the Wyeast 1272 - American Ale II would work well? I have been thinking about acquiring some for another brew and the more bang for the buck I can...

Scottish 80 NB vs AHBS and Dry vs Liquid yeast

This site has a list of acceptable uses for the Wyeast Scottish Ale: http://www.highgravitybrew.com/beeryeasts/styles_for_scottish_ale_1728.htm You can view all yeast usage recommendations at: http://www.highgravitybrew.com/BeerYeasts/ It's definitely one of the most useful resources i have...

My first brew. Expectations vs. results.

HomelessWook, as hard as it may be to resist try letting it sit untouched for another month or even longer if possible. After a year of homebrewing, I've done 10 now. My first brew was an Irish Stout and I swear I used to check in on that every week for 2-3 months before it shed that extreme...

    West Chicagoland

Brad, I'm in Naperville and would be interested in your extra immersion chiller once your new one is online. I don't have anything to trade but will buy it. I'd be happy to trade with anyone out there. There are lots of places to meet locally for an exchange. Here's what I have in large and...

WLP300 Hefe yeast *not* fermenting crazy - a concern?

I've brewed a Hefe and a Dunkel with WLP300 within the past month. Neither had crazy blowoffs, but I did attach a blowoff tube just in case. I just tasted my Hefe after allowing for a week of bottle conditioning (no patience) and it's awesome. Best beer I have made.

    Who's ordered from Hops Direct??

In some of my upcoming brews I've replace Simcoe with Chinook and Warrior with Columbus. They may not be accurate but I think it's suitable for my purposes.

    Who's ordered from Hops Direct??

I will probably have extra ounces of the following: Cascade, Chinook, Columbus, Fuggles, Magnum, Saaz and Willamette. If you, or anyone in the western burbs, is interested in trading a few ounces let me know. I'm interested in Amarillo, Centennial, Strippelspalt, Hallertau, Northern Brewer or...

    Dunkles Weissbier Dunkelweizen

Brewsmith, I brewed this recipe on Monday and it's actively fermenting with WLP300 yeast. My OG ended up at 1.063 but this is because outside boiling boiled off an extra 1/2 gallon and I'm down to 4.75 into the fermenter. Instead of adding water to reach the volume I just left it alone. Also, I...

    Washing Hefe Yeast

I just brewed a Dunkel on Monday and pitched washed wlp300 yeast on it. It's going to town right now and smells awesome. Note that I used the yeast about 3 days after washing it. I have some washed wlp028 in the fridge that has been sitting there for about 5-6 weeks. Might use it next week in a...
