    First batch nearly complete - few questions

    That's mainly just yeast falling toward the bottom when you bottle condition your beers. When I pour a beer from a bottle, I pour carefully and try to leave about a quarter inch left in the bottle with the yeast sediment. Nothing to worry about, enjoy!:mug:

    I would just let it be. I found when I tried to add some water it messes up the gravity measurement because you really have to mix it well. A half gallon short isn't that bad. :)

    Humann, I'm in the same boat. I don't have a temp controller, but I was using the beer fridge to store the bottled beer. When I opened the fridge one day, it was just blowing out regular air. Does anyone know if I just need more freon, or is the whole compressor shot??

    Tips for violent fermentation

    Your beer will be fine. There is a nice blanket of CO2 on top of your beer that will protect it during fermentation. :) Heck, there are a lot of people here that don't use airlocks, and their beer turns out great. :)
