    Is my stout screwed?

Brewed a big old stout all grain this weekend. Fermentation started great been going off for two days. Notice this morning though that the room I'm fermenting in has temperatures a bit high. The temperature of the wort is around 76 degrees. I also noticed a pretty bad odor being put off by the...

    All grain volume question

I did my first all grain brew yesterday. For the first time I thought it would be best to try one of the Northern Brew, brew in a bag kits. I started with the 5.5 gals that the directions said I should. After I mashed it said I would have about 4 gals of wort but I had around 4.75 gals. After...

    First ever bottle bombs

Ok. I popped the tops and about half of the beer foamed out, so I didn't think it was a good idea to just put caps back on. I transferred to a sanitized bottling bucket and then refilled bottles and capped, along with filling a growler. Should I leave the bottles out to bottle condition before...

    Fermenter question

I'm thinking about doing my first all grain brew and would prefer to do a 2-1/2 batch. Could I use my 5 gallon carboy for fermenting, or would that invite problems?

    First ever bottle bombs

I brewed a Surley Oatmeal Brown partial mash kit. I fermented for four weeks and bottled about a month ago. Two days ago I had a bottle explode and had a second one go today. I've drank a few and when they're opened they'll foam out the bottle mildly and have a great deal of head when poured...

Affects on IBUs using more water than recipe calls for...

If I boiled 3 gallons as opposed to the 2.5 recommended in the recipe would it increase the final IBUs. Would there be other effects to the beer?

What factors affect the time needed for bottle conditioning?

I made a strong ale and it didn't taste good until it was 4 months old. I just did an imperial brown ale which has a pretty high ABV and after a couple of weeks in the bottle it's relatively cloudy and the alcohol taste is a bit sharp (lack of a better word). I'm hoping it'll get better in...

    Gravity readings always off

They have been extract kits. They're usually off between 0.002 and 0.005 off. If that were the total deviation I wouldn't sweat it, but cumulatively it can be 0.010 off. On my imperial nut brown the difference in gravity changed my ABV from 7% to 3.5% (assuming I did my math correctly). I...

    Gravity readings always off

I'll check on the yeast nutrient, never heard of that before. The beer tastes good but it just seems week. Should I top off to 5 gals per the instructions or should I focus more on adding water to the specified OG?

    Gravity readings always off

The kits have dry yeast packs but I made starters with them in each case. As far as the hydrometer being accurate; I would assume it was off if it were always reading either high or low, but the fact that starts low and finishes high would indicate that it's not the hydrometer.

    Gravity readings always off

I'v brewed 4 batches so far. I'v used kits each time and followed the directions to a tee. On the first three the OG was slightly less than what was specified. All began fermentation quickly and fermented quite actively, but finished higher than specified. The forth batch, instead of topping off...

Holy Cow I made beer... True Story!

So it sounds like the valved brew kettle is necessary for the gravity flow system. Looks like you modified your kettle instead of buying one with a valve. How did you secure the valve to the kettle? Soldering to stainless steel would be pretty sketch. Do you filter the wort prior to the CFC?

    Maybe a stupid growler question...

Might be short on bottles for bottling day. Can I open a few finished bottles and transfer to a growler, freeing up a few bottles for bottling and not risking over pressurizing the growler during initial bottle conditioning? Or will this cause the transferred beer to go flat once opened?

    Dry hopping question

I have a plan! I'll do the primary fermentation in my bottling / fermentation bucket. I'll rack to my large carboy and dry hop. That'll free up my bottling bucket in time for bottling the brown.

    Dry hopping question

Primary carboy is like 6.5 or 7 gallons, secondary carboy is 5.5 or 6 gallons.

    Dry hopping question

If I bottle the brown it will have only been in the fermentation for two weeks. I'll of course take gravity readings, but are there other concerns with bottling too early? Normally I wouldn't have transferred the brown but I needed to make room for the next batch.

    Dry hopping question

This is my forth batch, but my first that requires dry hopping. Last week I brewed an imperial nut brown and this week I wanted to brew an India black ale. I transferred my brown to my secondary carboy to make my primary fermentor available for the IBA. Then I realized I "should" have a...

    Foaming out the blowoff tube

Brewing a relatively high gravity Imperial Brown Ale. I learned from my previous mistake with high gravity brews and went straight to a blowoff tube on this batch. Sure enough it's foaming out the tube; should I do anything to stop it or just let it run it's corse?

    Gravity error

It was partial mash and I ended with exactly 5 gals ( I've marked my carboy). I did recently learn though that I was making a mistake by boiling the wort covered. I've been brewing on an old stove in the basement and the only way I can get a good boil is by covering it. Would that have any affect?

    Gravity error

Thanks. I had read this before and it makes perfect sense for the OG, but why is my FG not getting where it should be?
