    Did you squeeze the bag after you pulled it? Odds are there was a gallon or more of high sugar wort still in the bag. If you did, it's probably the crush just like RM-MN suggests.

    US-05 and Wyeast 1056 are actually the same yeast just in different packages. You'll get more cells for less money with US-05 but they should both work out the same in the end.

    Odds are it'll compress into the bottom quite a bit. You've probably had the exact same thing happen in your bucket fermentors and just not been able to see it.

    If you're doing Biermuncher's Cream of Three Crops, he suggests Nottingham, there might be a liquid equivalent that I don't know about but I'd just use the dry yeast.

    High Hardness and On Demand Hot Water Heater

    I have super hard water at home (I don't have the stats but it would clog up shower heads and faucet aerators about once a month) I had a whole house tankless water heater completely clog up in less than 5 years. I'd suggest putting in the softener just to protect the hardware.

    Since someone is going to ask: What are the dimensions of the kettle? Most importantly the Radius. Boil off is dependent on the surface area not the total volume so it's hard for anyone else to say "with the same size pot my boil off is X" without knowing the surface area of yours. Other...

    How do you mark it? Do you just use a basic sharpie or something else? I'm probably just overthinking the not wanting Sharpie ink in my beer and should just make a gauge stick with a hunk of PVC and a Sharpie.

    I picked up an 18 gallon rope handled tote for mine at Home Depot for less than $5 a month or so ago. It worked just fine. Although it's a bit of a pain to move around with all the water in it solo.
