To be honest you should be fine. If you want to know what I would do, I would brew a low gravity beer with that yeast them pitch the Tripel right on the yeast cake. You should have 0 issues with pitch rate.

To increase gravity, some people do 90 min boils on pilsner based beers for fears of DMS.

To be honest your additions are pretty simple, I love my stir plate and it is super easy. Use a blow off tube hefe yeast is a monster.
