    Fast Souring - Modern Methods

What water profile are you guys going with. I`ll be doing a heavily fruited sour. Love the thicker sours.

    Fast Souring - Modern Methods

Has anyone managed to get a sour as thick and luxurious as Nevergonnagetit³: Xtreme by The Veil Brewing Co. or something similar. Wondered how much fruit per gallon you'd need and what water profile they use. I worked alongside Omnipollo and was serving Bianca Blueberry Maple Pancake Lassi...

    Lallemand Verdant IPA Ale

Just transferred to keg. 1st time I've not dry hopped on day 1 for biotransformation and I'm really impressed with it. The esters coming off in the first 4 days are insane Just need to carb now

    Lallemand Verdant IPA Ale

Ive got a beer fermenting with this yeast for the Verdant competition. The esters coming off the fermenter are insane and I've not even dry hopped yet. Ill keep you updated on the results

Dying to get my hands on Strata, absolutely love it. But none available in the UK at all.

New England IPA "Northeast" style IPA

Thats what I was afraid of, didn't want to waste money on the extra hops and it not bring much else to the table. But I wanted the extra in your face Aroma. I sometimes put it down to the quality of the hops we get in the UK TBH not being punchy and fresh enough.

What's the most grams per litre anyones gone with a Neipa so far. Just curious in regards to diminishing returns. My last was 15g a litre but was tempted to up it to 22.

So you don't do an early biotransformation dry hop then? At what temp do you get suck back into the fermenter?

Verdant released a recipe yesterday and a lot of useful info. Do you guys soft crash to 15 before dry hopping?? "Do not hunt for biotransformation, wait for the ferment to finish, make sure it passes a forced diacetyl test, soft crash to 15 and then dry hop. You will avoid hop creep this way"

    Lallemand Verdant IPA Ale

With regards to a suitable water profile for ESNW I would encourage home brewers to experiment. Get a good accurate water report for your area specifically focussing on ppm’s for Calcium, Chloride, Magnesium, Sodium, Sulphate and Bicarbonate. Down in Cornwall we have predominantly soft water...

Thats what I usually aim for, just set it and forget it. Wonder if a carbonation stone would make a difference

New England IPA "Northeast" style IPA

Carbonation Question. The difference I find between the American NEIPAs and our UK ones is the carbonation. The Americans ones seem much finer more spritz like bubbles, you can feel each bubble of carbonation. I keg my beers but still not nailed the carbonation on them like this. Any...

Im sure most of these guys using 37g/l + are centrifuging. If we used that much we would end up with hop soup
