    Ahhhhh...lines freezing!!

any quick fixes no but if its cold enough to freeze your lines its cold enough to freeze your kegs. Get a thermometer and check the fridge. I take it the fridge is out side? Then turn it way up and you might wanna insulate your tower better

    Quick sanitation question/concern

Yeah I would say next time leave it and do something along the lines of the post above. Your arm has way more cracks and crevices for bacteria then a stainless steel or plastic spoon. If you pitched enough yeast though I think you will be fine.

Adding your dark grains during the sparge

nice I brewed one batch of stout with dark grains in the mash, and I am going to brew the same beer by adding the grains just before I start sparging. One is going to be a month older then the other but I plan on aging the two and then doing a side by side comparison.

    carbonation question/issue

That happened to me alot when I bottled and everyone told me it was due to infection. Looking back it turns out I was not fermenting all the way and not reaching my final gravity. I think when I added the simple sugars it woke up what ever yeast was left and it started fermenting again.

do NB bittering hops taste aweful?

Any hop "flavor" should be boiled off. To see if you like the NB hops make a tea with them, and make sure they don't smell funny.
