Also, just looked at Wyeast web page & it says the yeast tolerates 11% ABV so 13% seems high... The temperature was roughly the same for the initial reading & the reading at racking.

I haven't tried Maple in Cider yet but have thought about it before, I think it sounds great. Maybe priming with it to push the flavor?
I'm interested in the extract version above but not sure about how the ingredients proportions work out or how many lbs of Malt to use based on the calculations... Is there missing info above or am I just not understanding how this is read?
Where are you located extexan? Louisburg Cider is available year round at many grocery stores in the Kansas City area, it's made just down the road in Louisburg, KS.

I have used the carbonation sugar drops before which got me thinking about using candy to add carbonation and flavor, I was thinking about a cinnamon apple cider with maybe red hots or cinnamon drops of some sort. Anyone tried something like this?
