Clear Wort, Clear Beer - Tips from Yooper

I have noticed that my hot break increased when I started using fermcap S, or the 5 Star equivalent, to control boil-overs. Any ideas how the addition of silicone effects the coagulation of proteins in the wort?

What do you all think of Fermcap?

Yes, with your set up you would not need the much valued fermcap. But if you are topping your boil kettle and/or fermenter, it can be a godsend. Fermcap is food grade silicone that after breaking up the surface tension and preventing boil-overs or blow-off, drops out never to be seen or...

Best Solution for mashing in the cold

Easy! Go Electric! A good cooler won't drop more than a degree or two during the mash if it's out of the wind. Better yet, unplug your dryer and go electric!

advice on moving from 5g to 10g batches

Use a BIG cooler! I use a coleman MAX with a ss braid, batch sparge and it works great! I use a plate chiller, but in Duluth, our Lake Superior is COLD, even compared to Lake Michigan. (You southern guys.... ;) ) Split into 2 6 gal better bottles to ferment! I brew 10 gal batches, AG, all...

Not entirely happy with my efficency!

Grasshopper! You are missing the point! Efficiency is NOT important! Consistency IS important! Better to always hit 65% than to be all over the board! If you are consistent, just add a bit more grain!

    Not loving S-04...

Love, love, love s-04! Grasshopper, you must be patient! Let it sit in the primary for 3 to 6 weeks! S-04 will then drop like a stone!

What do you all think of Fermcap?

I would not brew without it! I boil 13+gal in a 15 gal pot by adding 20 drops. No Boil over, EVER! I then ferment 5gal in a 6gal better bottle by adding another 10 drops. No blow off, ever! Fermcap is da bomb!

    whirlfloc

Panic not, grasshopper! Use one single whirlflock per 5 to 10 gal of wort. Not 2! Just one! I use one per 10 gal batch, single stage ferment, cold crash, and my beer is as clear as a bell
