    My first thought would to limit their choices down a few, and double down on some. I'd do 40L of Lager 40L of pale ale, maybe 2 different ones. Ditch the porter AND the belgium 20L of pineapple hefe since it's the wifes favorite That's 100L of beer, 25 gallons for 40 people, that's 250 beers...

    I don't always rehydrate. I dont really notice a difference when I do. I double pitch over 1.060.. My thoughts are if you are considerimg hydrating then maybe start looking at starters instead...

    There is a thread on this yeast. I have driven it below 1.020 once, but 1.020 seems to be average. Post up the Grainbill, the experts on here will be able to help better. Are you using a hydrometer or refractor to get that 1.026 number.

    I'd taste it. If it had an S lock, I would not touch it, but being a 3 piece, maybe it was enough to keep everything out. that said, it's going to taste horrible. You are going to end up dumping it, there is no real reason to keep it, but still neat to take a taste before dumping.

    I would use them in the mash, and I would be fairly certain that the preservatives in a single box will not have an effect on yeast health for a 5 gallon batch. that said, i am fairly certain that you will not even get a taste of applie jacks if used in the mash. or the boil. but still funny.
