    Scotch Ale Advice

    A scotch ale or wee heavy should never have crystal malt. The caramel flavors you're looking for come from an extended boil. Consider replacing all your crystal with additional base malt and 2-3% roasted barley, and do a 3 hour boil. I promise you this will get you where you want to be.

    Tell me about my water

    Yeah, you gotta tell it what you're adding, then it will tell you what you have. I actually use it in conjunction with Beersmith. I use the water profile tool there to figure out my additions, then use Brewers friend to get a more accurate pH prediction, and figure how much/if I need acid.

    You could use the brewers friend website on your phone. It's not perfect, but should get you close enough. I find that I routinely hit lower than it predicts, so I adjust for that. YMMV.

    If you're gonna add more yeast, I'd just add another dry pack. Dont make a starter with it - dry yeast is better off without it. As was said by another poster, dry yeast doesnt need aeration.

    Kegged 5 gallons of doppelbock and brewed 5 gallons of Scottish light today. Tomorrow, I'm kegging 10 gallons of brown ale and brewing 10 gallons of APA.

    I'm a huge Clutch fan. A little disappointed with the new album. It may grow on me with repeated spins, but as of now, the previous two releases are so much better. But, even still, its miles better than Strange Cousins.

    Bubbling in liquid line!

    Start with clamps. Check/replace dip tube o ring. Make sure keg liquid post is tight. Take apart quick connect and clean. May have to replace it if none of the above work.
