    I'm with libeerty. It takes about two weeks to get the carbonic acid thing going, which I think makes a beer taste more "finished" imho. If you are going to carb now, I'd just make sure I had some way to release pressure. Are you naturally carbing or force carbing?

    I agree. But I still use Irish moss and wait the time out to get as clear as possible. I got friends who have used my recipes and I typically come out clearer. I think racking to 2ndary and waiting a week or so is good enough!

    I dunno. I typically have done seven to nine days in the primary and at least that long in the secondary for clarity. I guess if you do want to wait two weeks, that's pretty foolproof and can offer consistent results, but don't think it should be a hard and fast rule.

    I'm using about three feet of tube and two of the "swizzle sticks" mentioned in the sticky post at the top of this sub-forum. My CO2 regulator is set to 12PSI and after two weeks, it was a perfect pour. I think that's the sweet spot for me.

    Thanks everyone for the replies. I know I can set the temp lower, but not sure how low. Plan B is to use the smaller fridge we have in the garage, but it isn't as nice looking as the wine cooler, (it's got a glass door with a purple tinted light). My Co2 tank is 10lbs so it's huge!
