    Oak Imperial Stout fermentation question

    10 days is super short for an imperial. Yes, you can wait. It won't harm anything and will allow for the yeast to continue to work on your beer. I've had imperials in the fermentation bucket for 60 days and others on this site have let them sit for months with no ill effect.

    If you are using a starter kit from a local homebrew store, you shaould already have a peice of tubing that came with your auto syphon. It is the exact size you need and works perfectly.

    You can use the oven or the dry cycle on your dish washer. I don't know the exact temps you need to hit, but both are capable of sanitization.

    Lowe's/Home Depot has pretty much every conection joint in their plumbing department that you could think of. I've got a garden hose attachment, kitchen sink attachment and a quick connect coupling attachment. Head there and you should be all set.

    You might want to look into a larger pail for your next batch. 1"-2" of space will be taken up easily by krausen, you're going to run into this for pretty much EVERY batch you make. Invest $12 for a 6 or 6.5gal bucket. It will make your life easier.

    The Mr Beer website has a lot of recipes for all of their hopped extracts. They have a few that mixes more than one of their flavors and they also give ABV estimates. I'd check that first.
