Maybe just run the tubes into the fridge between the seal and the fridge and get a latch for the door. I know they have latches for refrigerators. Wont be a perfect seal but should help get the job done.
Freezing an eisbock now in MN, been going for a few days. Wish it would get just a touch colder to speed things up but definitely been removing a bit of tasty beer-slush.
Awesome work! My first fermentation chamber was a wall AC unit in a boxed-off area. Yours is much more polished and looks like it will work well!

Seems like you are on the right track, then! Just make sure to use the probe on the inkbird (or other thermometer) to get an idea of the temperature so you have a starting point for your next brew.
Also, remember that fermentation is exothermic, so pitching at the right temp is important, but...
Any idea at what temp you pitched at the first two brews?
Maybe add the water to get to your full fermenter volume (if you have an idea of the volume you will need after boiling) into the boil kettle and then put the kettle in an ice bath or use a wort chiller to get to 62.

Just started electric brewing myself and believe you will want a controller to control the power to the element. Otherwise, it will always be on 100% power.
For heating strike water that is fine, but you will want some control over your boil, especially for the hot break so you don't boil over...

Did a search, and no you do not want to lay the tank horizontally. Inside the tank is liquid co2 under pressure, and you want to avoid having the liquid get to the nozzle.

Are you using a standard bucket with a red grommet? I usually just stick a piece of tubing in there and run it into a bottle filled with sanitizer. Can't remember thr tubing size though sorry.
