    Light beer gone dark....

I always have trouble with my extract beers coming out darker than I would prefer. Look into adding the majority of your extract at flameout. That should prevent caramelization and scorched wort tho I have never done it myself.

    Straight sugar brew

I believe I came across something on youtube called a alcohol wash? I believe it's just sugar water that you ferment out and you can flavor with damn near anything. Search around on youtube you may find some info.

    Rant

Yea been there. I was checking out a store on my way home from work. Was tired and wasn't really paying attention to prices. Final came out to 58$. Probably could have put it together for 40ish online.

    quick turnaround brew

I suggest something hoppy. Like an pale ale or IPA. Dry hop at about ten days and keg 7-10 days after that. I have an IPA going right now that will be bottled in two weeks and most likely drinkable in 3.

    Harvesting yeast question

I'm thinking about harvesting some yeast from a recently bottled batch of beer and have a few questions. What I am planning on doing is collecting the yeast from a couple bottles by leaving an inch or so of beer in the bottle, swirling, and pitching into some sort of container. Then...

    What have I missed?

I caught the brewing bug pretty bad about two years ago. Then life happened and before I new it six months had gone by without me brewing! So today I decided to buy two mini mash kits as an easy way to renew my passion. Any new knowledge or cool equipment I should be aware of before I start...

Heading to Pittsburgh, Philly and Delaware, where could a guy get a drink?

Two stones pub right outside Newark DE. Great food and I think 25 craft beers on tap with countless bottles. Best part not a drop of BMC in the entire place. Was told they don't carry Guinness because it was to "mainstream". Seems kinda snobbish to me but you know they love beer over there. 10...

    Undercarbonated beer

I would wait maybe another two weeks before even thinking about re bottling. Give it some time. I see these threads pop up about people dumping all the beer to bottle it all over again. Personally I have never had a batch that didn't carb up eventually. Usually the answer to these problems is...

    Mystery bag of hops

I would say its prolly bout an ounce and a half. Also it's two different types of hops. I was going to use them to dry hop something else but forgot to write them down. Most likely I am just gonna dry hop with them and hope for the best.

    Mystery bag of hops

In the back of my freezer I found a bag of pellet hops. I have completely forgot as to what kind of hops they are. I was thinking of just tossing them in for dry hopping my fermenting rue IPA. Does anyone foresee a potential problem with this or have any other good ideas? Me thinks that they are...

    So who's brewing this weekend?

Approaching boiling temps as we speak on a rye IPA. Time to start drinking.

    Dogfish Head 75 minute IPA

The one thing I did notice it was very over carbed. Very hard to keep the head down even with a very slow pour. Not sure if it was designed to be that way or not.

    Dogfish Head 75 minute IPA

It is very very good. I picked up two 750s. The first one I had tasted like I was drinking maple syrup straight from the bottle and I hated it. I almost gave the other bottle away but then I realized I was drinking some super hoppy beers right before and prolly trashed my palate. I opened up the...
