    SWMBO used to work at a brew pub (Thirsty Dog) and actually lost her taste for beer. She has a couple go to beers for the rare occasion she does have one. Just so happens that she loves my oatmeal stout. Lucky me!

    I batch sparge as well. Not sure if I have all the settings correct in my software but its in the high 70s low 80s. You really need to make sure your sparge water brings your temp up to 170F and that you stir it well and let let it sit. I let my sparge sit for 10 mins at 170F then drain. Also...

    Foil fell off starter :-/

    Used it. Thanks for the calming reassurances. Bubbling away in the swamp cooler as I type and smells yummy! If it ends up infected, however, all you will will receive a bottle and be forced to drink it, lol. Cheers, JB

    Foil fell off starter :-/

    Made a 2L starter a couple days ago with an older vial of yeast. Today (brew day) I went to get the starter and apparently it vigorously fermented last night and the foil came off the flask. Now I am kinda sketchy as to whether I should use it or not. Any opinions? JB

    I used clove honey, too, and do not have any honey flavor in mine. Sure you're not tasting residual sweetness from the malt? Tell us about your brew day (mash temps, gravities, etc). London Ale yeast can lend some fruitiness that might be confusing your palate. Is that possible? JB

    Dunkel help

    I'd be suspect of that except I saw no signs during fermentation and I think my sanitation methods are reliable. I have a degree in microbiology and use aseptic techniques in the lab. So far not an issue with the 3 other brews I've done. Guess I shouldn't rule it out though. Thanks, JB

    I am experiencing an odd aftertaste in my first attempt at a dunkel. I wish I could describe it better but the only way I can think to describe it is to say that it has a very sour aftertaste. Its not bad up front but that first exhale out of the nose after taking a drink is very overpowering...

    I did hit my gravities. The recipe called for 1.25lbs of honey and I added a little extra to add some more fermentable sugars. I am mixing this batch with a Christmas ale I made that I over-spiced. As long as the flavor is what I am looking for, I am not really concerned with the ABV. Thanks, JB

    I've read people on here saying they do what you do. Right now I have an "ain't broke/don't fix it" mentality. I lost 2 degrees one time and 1 degree twice. Today I couldn't get the damn thing to cool off when I wanted it to, lol. I'm sure it will turn out just fine. Cheers! JB

    The electric stove here would be a pain t work with! I have plenty of propane and its actually comfy in here after the burner has been running a little while. Plus SWMBO would prefer it not dominate the tiny kitchen, lol. Man time in a manly place. JB
