    Looks ok to me. I harvest yeast for future batches the same way, great to get a couple uses out of a single pack/vial.

    Yeah, the lactose is going to give you a higher final gravity, but there's nothing wrong with raising the temp and bit and ensuring that the gravity is stable before moving forward. Good luck!

    Yup, just echoing what others have said, it looks like a good bit of break material settling out. If you have room in a fridge, you can cold crash before bottling to help compact the trub down and hopefully end up with more/clearer beer.

    Well you know what they say about laws and sausages... and apparently beer fits that as well. Some of those amazing pellicles that result in delicious sour beer, or the grey, mushy fruit left at the bottom of the barrel... yeahhhh.

    Nugget is always a great option for bittering. Equinox could be an interesting option for a single-hop session IPA, especially since it's just a small batch.

    5) In general, yes - same types of grains, just smaller amounts. You could also consider mashing at a slightly higher temp or adding some body building malts (I like a small % of oats or flaked wheat) to keep the beer from getting too thin.

    You've got a few options there. You could pull it off with a few minutes left in the boil, move it to another pot and add the honey then, or you could even add it a day or so after fermentation starts.

    Since it's a honey witbier, you could even try using honey (instead of sugar or DME/LME as suggested above) to up the gravity.
