    Yeah - I've never seen any true krausen form when I've done ciders. I'd also recommend adding the nutrient before you pitch the yeast next time, just as standard practice.

    For me, I'd rather not take the risk, so I'd probably make a new starter. You might be fine going with the yeast from the stout, but I'm more in the "better safe than sorry" camp.

    What can I brew with lower temps?

    Yup! Came to say Kolsch, and all of this is true too. Good luck, definitely easier to have the lower temps to deal with than higher, IMO. You could also pick up a Brew Belt or something similar that gently warms the beer, and a temperature controller. That way you've got the best of both worlds!

    Suggest IPA Hops

    In the right context (and depending on the flavor/aroma profile you're aiming for) pretty much any hops could work. Personally, I'm a big fan of Galaxy and Amarillo, and I've got some Zythos and Apollo on hand that I'm going to try in a hoppy Pale Ale soon (either separately or together).

    Columbus and/or chinook in a porter?

    Haven't tried either in a porter (though Columbus is one of my preferred bittering hops in general), but I don't see why you couldn't try. Maybe Columbus for bittering and go a bit lighter than you usually would with the Chinook for a little pine in the aroma?

    Designing my next brew...

    Some good suggestions here. I like using wheat malt in my hoppy beers (just a preference thing there), but trying another yeast and/or upping the mash temp would be a good start too. Maybe an English Ale yeast (Wyeast 1318 has been great in my hop-forward pale ales) would be worth trying...
