    I switched to distilled water when I lived in ny and had real crappy well water. It looks like the water I have in Florida will be much better to deal with. The first thing I noticed is how far off the cities water report is from wards. I wouldn't trust any water report on a municipality website.

    Florida Brewers

    I have been using an immersion chiller to get down to around 90-100 then I finish cooling it in my fermentation chamber. I have my chest freezer nice and cold and tape the probe to my bucket. It has been working very good. My tap water in the summer is about 85 so its very tough to chill here...

    It has to be the fermentation that raised the temperature I had the probe about 1 foot from the bottom of the freezer. The Temperature gradually dropped as the fermentation slowed down.
