I use a Mash&Boil with a the basket and a Wilser bag. The unit sits on a printing cart with locking wheels about 15” off the floor in my kitchen, solving the “too high” problem. I’m 6’3”.
Reflectix. I pieced it together and sealed the edges with the aluminum-looking adhesive tape that was sold on a shelf nearby at the hardware store. I’ve used the same piece for 3 years+. If it gets a bit sticky, I give it a quick rinse or sponge it clean.
I noticed a significant difference on my 8 gallon kettle for 5G batched on a 1800 W induction burner. I use it now on my Mash & Boil and can see a difference in the vigor of the boil.
Isn’t it possible (depending on the recipe) your mash pH could drop below 5.2 if your adjusting your strike water to a pH of 5.5? It maybe that’s only an issue with grain bills with darker grains.
I use Lallemand CBC-1 at bottling time for my Belgians. I use enough corn sugar to carbonate to 2.5 in the bottle. I end up with good carbonation and a dense head.
I brew 5-6 gallon batches and really like my Speidel fermenters. I think they’re somewhat over priced (more so with recent increases) but I love the handles and the overall quality is terrific, IMO. Two on opposing sides and very strong. I find them easy to clean as well.
I like mine as well (with the pump) and use it with a BIAB in the pipe and reflectix for insulation. Although I almost wish I’d waited a year for the version II - the improvements are worthwhile. Frankly, I think the differences between 3-4 of the AIOs is splitting hairs unless 240v is important...
Typically I use 5 - 5.3 oz of cornsugar for a 5 - 5.25G batch and that has been widely recommended for years in the hobby (unless it’s a Belgian, for example). 2.5G would require 1/2 that for the same result.

I have both as well for my Mash & Boil and also agree on the Wilser due to less rigidity. Also, I had it made to fit the outside of the kettle, not the malt pipe. This eliminated the possibility of any grains getting in between the the pipe and the side of the kettle when poring the grain.I...
