    Cellarscience Baja Experiences

When I transferred to keg the sample I tasted didn't have any noticable off flavors. I'll taste a carbonated sample sometime in the next few days.

    Back To Basics

I'm going in the opposite direction. I just got a used Foundry after doing stovetop since the beginning. I like that I can set the strike temp and don't have to watch it so I don't overshoot my temp. Immersion chiller is much faster than water bath. The only downside is I can't do mash one day...

    Cellarscience Baja Experiences

I'm reusing Baja for the 1st time. I probably underpitched as I put the starter on the stir plate right before I started brewing. Lots more lag time than when I pitched from the packet. I'll know how it is in a month or so.

    Recipe kits or DIY?

The warm oven mash trick is what I have been doing for years for 2-ish gallon stovetop BIAB batches.

    Recipe kits or DIY?

I do less than 5 gallon batches, so if I do use a kit, I scale it down for my batch size/system and keep the remaining ingredients for something else. I also use the morebeer recipe sheets. I definitely recommend starting with kits to get your brewing process down and worry about...

    Warm Fermented Lager Thread

Lutra ferments hot. I've used it for a Märzen and it was decent. I preferred the version I made with MJ Cali lager.

What lager yeast in Sierra Nevada Lagers?

Last year I made plans to do a Summerfest clone which quickly morphed into a wheat clone (the one they used to make until 2000s) that got a few ingredients changed to a Voss and all crystal hops ale that I loved. Now I don't have to try to make a clone this year.

    Cellarscience Baja Experiences

My keg of this just kicked. Time to make more! When compare to the actual Negra Modelo, mine had a lot more yeast character (and flavor overall). It tasted more like a lager (I don't know how to describe it). I just started making lagers recently and have only used MJ Cali lager and Baja. The...

    Cellarscience Baja Experiences

I didn't rehydrate as I figured I was pitching way more than required (also lazy).

    Cellarscience Baja Experiences

I used this yeast recently on a negra Modelo type beer. I pitched one pack for 2.5 gallons at 62-64F and fermented at 55F. I didn't have the lag you experienced. It took off in less than 24 hours. Maybe the extra 5 degrees made a difference? The end product is super tasty and would definitely...

Brewing a Dark Mexican Lager (***** Modelo Clone) Made Possible With Some Basic DIY Modded Components

I brewed one recently based on the claw hammer supply recipe. The grain bill is similar to yours. I used Cellar science Baja yeast. How did yours taste?
