I think they're hot, but you probably don't

Fun fact - Liv Tyler apparently grew up thinking Todd Rundgren was her dad. Didn’t learn about Steven Tyler until she was in her late teens. EDIT: I guess she found out earlier than late teens.

What did I cook this weekend.....

THIS was damn good. SWMBO said she’d like me to make it again, which is a sure sign it was a hit. I used a mix of shiitake, oyster and cremini mushrooms, which was one of the best parts. SWMBO suggested adding even more next time...

    That sounds really good!

    Beers that share similar ingredients???

Came to say the same thing. 100% Pilsner with lager yeast gives you a nice light lager. Ferment the same thing with Trappist yeast and you get a wildly different patersbier.

    Pressure Cooker recipes?

So I got a whole chicken and cut off the legs and breasts and decided to try to make stock in the pressure cooker out of the carcass and giblets. Expectations were not too high, but what the heck. I sauteed some onion in the bottom of the cooker then added the bones and giblets, 2 qts of...

What did I cook this weekend.....

Whole chickens were $0.99/lb, so I’m gonna play a bit. Legs and thighs will be in a mushroom/orzo/spinach thing tonight, breasts for cacciatore tomorrow and, since I need stock for both recipes, I’m gonna throw all the bones, giblets and stuff into the pressure cooker to try and make a couple...

    Inappropriately named brews...

Funny how that ATF labeling approval goes. Mobcraft has one called Bat***t Crazy. Bremen Brewing in Milwaukee has “Butterfly Farts.” Lagunitas “Chronic” and “Whiskey Tango Foxtrot” didn’t pass muster though.

    Who's smoking meat this weekend?

SWMBO requested pork butt for a friend’s’ get-together today, so I got it going last night. This is the first overnight cook with the WiFi-enabled Flame Boss her family got me for Christmas. It’s pretty cool to be able to roll over in the middle of the night, grab the iPhone and check to see...

What did I cook this weekend.....

I made an Irish beef stew the old fashioned way in a Dutch oven - no crock pot, no pressure cooker. It turned out really well - tender beef, thick flavorful broth, lots of tender carrots and potatoes, too. Will definitely make again.

Yeast Starter on a Stir Plate Questions

The head space for me really seems to depend on the strain and ambient temperature. If it’s 70+ F, the yeast seem to get more active and more likely to make a big krausen. Strains like 001 and 1007 seem to make enormous krausens regardless of temperature. Those two always overflow if it’s...

What did I cook this weekend.....

I made shrimp shell stock risotto and it was a hit! I had about 8 16-20 count shrimp leftover, so I warmed them up in butter and coarsely chopped them, then I put a scoop of risotto on the plates, put the shrimp on top of that, and another scoop of risotto on top of the shrimp. Leftover...

    Pressure Cooker recipes?

I recently pulled the cooker out and did ropa vieja- chuck roast seared on all sides, couple peppers, a chopped onion, some garlic, a can of tomatoes and a good shake each of paprika, cumin and oregano. 30 minutes on high and then I released pressure and shredded the beef. It was like it had...

    Wlp500 and cold

Are you saying the beer was at 39 Fahrenheit for a while, and then you're planning to bottle and condition at 20 Celsius?

What I did for beer today

Kegged my Dortmunder lager last night and hit it with gelatin this morning. That’s it - all my kegs are full and fermenters are empty. Plenty to hold me until the weather warms up.

What did I cook this weekend.....

Many years ago during my University of Wisconsin days, friends and I were sitting out on the Union Terrace on the lake and lake flies were swarming and we kept getting flies in our beers. One friend disappeared for a while and came back with Sip N’ Steins for all of us. They’re covered insulated...

    Best yeast for stuck fermentation

1.020 is a little high, but just a little. I use 1968/002 a lot and I really like it, but it can be a low attenuator which sometimes is what you want. Anyway, if you really want it unstuck, try the old tried-and-true method of making an entire separate batch, let it ferment, rack off the...

What I did for beer today

Kegged my favorite oatmeal stout recipe (which I didn’t make last year, so I’m especially excited to have it again this year) and started carbing it alongside the bock that’s been lagering.

What did I cook this weekend.....

Post script: white fish perfectly poached in rich flavorful shrimp shell stock still NEEDS a sauce. Will work on that.
