    Ale fermentation temps

    You may want to search out yeast strains that "operate" in your temperature range. Those temps are close to some Lager strains. As mentioned, get a temp gauge to see your real temps. Cheers!

    Fresh Raspberries or Frozen?

    I would definitely use the frozen berries. First, thaw...lite mash them up lightly. put them in some cheese cloth & add to the fermenter after it has been going a few days. I did this with a cherry wheat & it helped a lot. Cheers!

    What's in your fermenter(s)?

    Right now, I have a NB "John Q. Marblehead lager" (my first lager) working & it is in the cold crash / lagering stage. I was able to get my wine refrigerator down to 36 degrees (F). I will lager it until about the middle of May, when I will then bottle it.

    Tips 1. Towel underneath your spigot 2. Have 52-55 bottles cleaned & ready to fill 3. To gauge carbonation - Fill 2 water bottles & squeeze the plastic in a little & cap...When the bottle is hard (expands) to the touch, you are close to the beer being fully carbonated..test the first, check carb...

    If you have a Hydrometer..Take a reading to see if you have reached your final gravity. Might be done if you get the same reading multiple times

    I would try a "Bourbon Barrel Porter"...maybe add some Vanilla Beans...Make it of a higher gravity for longer ageing in the barrel. Good luck! Can't wait to see what you decide on.
