    That is what I understand too.. As I understand it, even if the beer was over-pitched.. it won't ruin it, but it might introduce a slight flavor - evidently you can taste yeast. I doubt my lousy palette would notice anything.

    Estimated Alcohol by Vol: 8.0 % according to BS (15.5 lb grain bill). I am anxious to sample it.. but its still bubbling away.. Sunday the week is up and I can hopefully get a feel for it.. I am so invested in the batch already, unless it is really awful, I will do the extra dry hopping...

    Could it be that you could have used more yeast initially? My local homebrew store recommends using two packs of US-05 for an OG in the 1.06+ range. It could explain why it is still going after 3 weeks.. I am not an expert.. but just wanted to offer the thought.

    That could work.. I think I might give it a go.. I do wish the bag was separated with a bit of tubing for more flexibility.. I only have a few inches above the fermenter. In the meantime I did make good with my own implementation - So far so good. My brew has only been in the fermenter...

    Yeah I am really interested in that device.. my problem with it is the horizontal volume requirements.. I don't think it will fit in my freezer straight to the side like that.. maybe its smaller than it appears.

    Ah yes.. I have everything to build this except the hose tee.. I agree its so simple and cheap.. why not do it.. Mylar balloon at Walmart 97 cents and whatever the cost of the hose tee. Everyone has extra tubing laying around.. Awesome.. Searching the internet for different solutions...

    Here is a thought.. What about the idea of stretching a balloon over the fermenter exhaust like what the ancient technique used by home wine makers? Or even using a balloon in place of the gas resovoir. Surely over a weeks fermentation time, it would generate more gas than it would suck back...

    Oh boy... I have found an IPA recipe I really like. I brewed it a couple of months ago.. and it is really great.. I thought I would brew it again but substitute one of the hops and increase the citra.. So after a trip to the Homebrew store and $48 later, I started the brewing process...
