    Who's smoking meat this weekend?

Start with the shoulder. It should have an easier learning curve than the brisket.

FINALLY ordered an RO setup! What should I know?

Hard to tell, but from your pics, the TDS out is attached to a yellow line. That typically is the waste water not your RO. Make sure the waste & RO are plumbed right. On mine (Buckeye Hydro as well), the yellow is coming off the ASOV. And one if the whites is the RO.

    Stains on glassware

Same questions as above. Do you know if it's the inside or outside of the glass? You could also try Bar Keepers Friend if you don't have CLR on hand.

My Hopstopper V2 - On Gas - Implementation

I use one in my keggle. I got the SS tube when I got the hop stopper. It's @ 90° and the grommet is off "center". I haven't tried it yet with pellet hops as I'm trying to go through a bunch of whole leaf I have.

    c02 quick disconnects?

Looks like you can add a pressure kit that allows to add ball lock fittings to it.

    c02 quick disconnects?

Why not use regular CO2 QDs? Is your tank on the outside of your kegerator?

I have no personal experience but I think I’m leaning to trying this: Hop Filter from electric brewery
