    Please take a MSF course before you do this. They are around 100$ and you get your license endorsement with the class. I would hate to lose a fellow homebrewer and rider. Last thing I will say is ATGATT. Do these things, get a bike (start with a 600) and have fun. Honda shadow or a v-star.

    Half batch of Humpty Dumpty ESB from Chucky P. Halved the recipe but forgot to cut the hops in half >.< . Well.... So it goes. Sooo now ill just call in a IPA?

    I have used a heat blanket and would not recommend It. Go with a brew belt or beast fish tank heater in the Tupperware method. Heat blanket is too sketchy and inconsistent. I dont sleep well knowing I have a heat blanket plugged in and running with 5 gallons of liquid and a bunch of blankets on...

    Secondary

    I have a buddy who does primary ferm in bucket... Secondary in a carboy. I'm all about "to each his own" with HB methods but why would you not do primary in the carboy, Secondary in bucket? Not only is it fun to watch but just seems more intuitive. What do you guys do?

    Others may disagree but Sopfie is not a true Saison from my understanding. Don't get me wrong, I love the stuff! 2011 is the best year IM0. What year did you try?

    Brilliant clarity without cold crashing

    +1 to cold temps. After carbonation refrigerating your bottles for 1-2 weeks will clarify just about anything. Just did a berlinerweisse with 1007 (notoriously low floc) and it is crystal after a few weeks in the fridge. Pour gently and you are good to go. Ill post some photos of 1 day vs 1 week...

    What's the worst craft brew (commercial) you've had?

    2012 sofie is blah, very boring Belgian ale. The 2011 batches are much better, a bit tart and way crispier (possible lacto infection at some point along the way, most of the bottles even gush a bit) but damn its good.

    Watching you pour makes me cringe... Quite aggressive ;-) not a criticism just to be clear! Great video though on why it pays to wait (not that I ever wait longer than 2 weeks to start drinking a batch) I regret it every time.

    Windsor yeast activity unusual?

    Highly doubt infection if you racked @ 1.03.... Still lots of work to be done there. You didn't mention anything looking like an infection. Racking probably just stirred it all up and gave it a bit more o2 to finish the job. Don't think you hurt anything by racking early... Might have just sped...
