    Beyond "Best by" and Starter

I have some Omega yeast that has a package date of about a year ago, and doing a test starter it is showing viable. I'm looking to make a 1-2L starter, can I just make a 1-2L starter, or do I need to make a bigger one to compensate for the age of the packet/dead yeast?

Can I add lactose on bottling day?

Same amount of priming sugar. I've read to use the same amount of lactose, and when I tried doing it it came out too sweet for me, however, over time it is smoothing out. If I were to do again I may dial the lactose back, maybe. The overly sweet thing may have been a recipe issue too, since I...

    Post your infection

When taking a sample for a gravity reading, it tasted alright. Is it worth keeping around, or dumping?

    Post your infection

Not sure if I got an infection or not, and may be paranoid after my first. Used Hornidal Kivek yeast on this one.

Liquid yeast left in a starter for a month

Similarish, issue a ways back, only I kept min in the refrigerator, and it worked fine. If suggest trying another starter to varify viability.

    Flip Top Growler Bottling?

Thanks for the responses. Since I have a few, I may give one a try on my next bottling day and see how it goes.

    Flip Top Growler Bottling?

I found a few flip top glass growlers I forgot I had, and I'm wondering if anyone has bottle conditioned in similar ones before? I've seen general consensus for growlers is a no for bottling, however most seem to be looking to use screw top bottles. Thoughts on using these? They seem to be...

    Post your infection

Thank you all for the responses. Thinking back at my cold side process, I soaked/sprayed/wiped everything down with StarSan, as I always do. The only time I can think I may have not sanitized well enough was when taking a sample. None the less, thanks for the confirmations, I've got everything...

    Post your infection

Thank you, I was mainly looking to confirm what I assumed. Questions I have: 1. Being plastic fermenter, can I just clean, sanitize, and reuse? Or are the fermenters done for? 2. Are both infections the same, or different?

    Post your infection

I believe I have two batches of beer infected. When I checked their gravity at the beginning of the week they looked fine, some yeast rafts, and around the final gravity I expected. When I went to take another gravity reading to confirm fermentation was complete I was surprised that both batches...

Help Me Build My First NEIPA (Hop Schedule, Specifically)

I have dry hopped some SMaSH brews and bottled with little impact on flavor. I think it's the amount of hops used in the NEIPAs. Check out the Hop and Brew school podcasts. I don't remember which episode it was covered in, but it might have been ep. 4, 5, or 10.

Help Me Build My First NEIPA (Hop Schedule, Specifically)

I made a similar recipe (Galaxy and Amarillo) , all hops were added in whirlpool at 150,which I heald for 45min,then chilled to pitching temp. I did one dry hop around day 10. I bottled, and it came out great! However, after about a week the beer went downhill because of the oxidation. I'd...

    Kansas City, MO

I going to be visiting the city late next week/end, and would like to stop by some of the breweries, time permitting. Can anyone suggest some must-try breweries? I'm not certain how much time we will be spending in the city, vs a couple of surrounding areas, such as Raytown, but I'm hoping to...

    Stout Critique

Rereading everything here, I haven't been clear what my goal is. I want to make a stout on the sweet side, with some caramel and chocolate notes. I like my American Stouts, however, from the English ones I've had seem to prefer them when I can get them. While I'm trying to keep to using...
