The only way to tell if fermentation is complete and you’re ready to bottle is to check your FG at least twice and make sure it hasn’t changed. You’ll want to check it 2-3 days apart and if it hasn’t changed you’re good to bottle. if you cold crash before bottling it will cause some stuff to...

It also depends on how you have your blow off tube set up. When I run one I just run it into a mason jar with some starsan. most of the time I don’t catch it bubbling but it’ll make the starsan foam up.

You’ll be fine for carbonation but be careful with extracts. I think they always leave a funny alcohol/ cough syrup taste. And it takes forever for them to mellow out while conditioning in the bottle. I’d plan on a month at least. That’s if you notice the off flavor. I’ve had some people try...
