    Low bitterness is definitely what I would consider a signature element of the style... if you have a bitter backbone as well, then you have a "west coast" IPA.

    I'd just make sure to religiously use the little rubber faucet cover or you'd have bugs all up in it all summer, at least around here.

    Also, every Sierra Nevada beer that I've had at the brewery is way way better than it is bought in the store. I don't know why, but they lose something in packaging/transit/aging, whatever it is. Every one that I've tried.

    Yeah, I wish we had those, but we don't have any of them available that I know of. I can go to specialty beer stores, and if you want to spend $6/pint, there are MANY choices now, and most of them are much better than any of the widely distributed versions. But I've never been able to compare...

    Well I just looked it up and sure enough they list Hazy Little Thing as a NEIPA, with an ingredient list that sounds like it should be, but I'll be damned if I can taste anything resembling a NEIPA in it. Maybe it is a problem with the distribution channel and I should try it at the brewery.

    Temperature swing at the worst possible time?

    No idea if it will be decent or not, but I definitely wouldn't dump it yet; I'd just proceed as normal and see what you get. I'd be more concerned with figuring out why my temp control failed overnight and making sure that doesn't happen again.

    There is nothing I'm "testing" here. I just wanted to ferment 10 gallons of beer. I'm definitely not an expert on yeast health, but, my pitch rate into the starter was right in line with what was mentioned above, and the starter looked like it did its normal starter thing to me. I don't know...

    Hazy Little Thing in my opinion would not even really be what I would consider a NEIPA. The biggest similarity is that it looks hazy. It doesn't have the citrus/fruity flavor profile. In terms of what is WIDELY available, I agree New Belgium Juicy Haze isn't bad. The Sam Adams version isn't...

    Thanks all... one last question. Is one dry packet direct pitched enough for 5 gallons, or do I need a big starter? Everyone seems to be saying you should be using at least twice as much yeast as you do for ales.

    I buy these by about the half pound normally and I'm used to AA content indicated in the 4.x range. Well I got a new pack yesterday and this one say over 13%? Does that sound reasonable? If so I assume I'll have to adjust my recipes.

    I'm assuming this is a five gallon batch? What was your target preboil volume, did you hit it, and what was your post boil volume?

    A couple thoughts... It is probably ok but that mash is a little thin, most people recommend 1.25-1.5 qt per pound. The dextrose would normally be added late in the boil... not sure what the effect would be, but want to make sure it isn't going in the mash. 162 is quite high... 152 is usually...
