    It is an Ale yeast. The brand names are Danstar and Lallemand Inc. and its called Nottingham Ale Yeast. The package says to add the yeast to a 100ml of water at 30-32 degrees Celsius or 86-92 degrees Farenheit.

    I just updated my profile picture to show the Noble White that I have been referring to. The colour was darker than planned since I started my boil with all of the malt extract instead of saving the majority to the end of the boil. All in all, I like it a lot.

    I was using a bottling wand for while but found it to be too slow. I now use the tube of the bottling wand on a rubber hose with a hose clamp. I find it works a lot faster than the wand which frustrated me. I noticed the sediment which like you said looks like yeast. I never noticed it before...
