    Simcoe: Back in stock.

I wish I had seen this earlier. I paid $44 for a pound of Simcoe leaf hops. That was the only package size the local supplier had, and I needed them.

    Super High Gravity Ale HELP

I brewed a similar Utopia clone (4 gallons) and have run into the same issue. Mine has stalled out at 1.090, starting from 1.200. My plan is to do a 2 gallon batch of barleywine at 1.090 and get is in full krausen and then add in the Utopia half a gallon at a time, twice a day until I...

    Finally using Beer Smith properly

I have never really utilized all the functions of Beer Smith. I finally took inventory on all my brewing ingredients and put them into the program. When I put together the brews I want to do this weekend, I just hit the add to shopping cart list, and BAM, all the items I need were put in there...

    So who's brewing this weekend?

I have three brews lined up for tomorrow. A Surly Furious clone, taken from the recipe kit. A Delirium Tremens from Beer Captured book. And a small batch Barleywine, for an experiment I currently have going. Should be a good day, and we're finally going to have some decent weather, instead of...

    Making fruit beer

I made a cherry lager a few years ago, and it turned out fantastic. I had the cherries prepped and after the wort finished the 90 minute boil, I chilled it just a bit, down to 180*. I then added the cherries to the wort, and left if steep for 20 minutes. I then finished chilling the wort and...

Yes that is the new freezer for SWMBO. I have an old, HUGE chest freezer I plan on converting at some time.

    Bottle kegged beer

I put together the poor man's bottle filler. For under $3 you can do it too. A number 2 drilled stopper and a piece of straight racking cane. I would think since you are kegging that you have the picnic dispenser tap. The racking cane should fit snuggly inside it. Just slide the drilled stopper...

Best Method to Sanitize Wine Thief

When I am doing alot of racking, I will make up a gallon or two of iodophor sanitizer and put it in this. It's long enough to lay my auto siphon, racking cane, tubing, etc., without wasting too much.

    Aerate after pitching yeast?

I've aerated a couple different ways. Recently I just poured from primary to primary, several times. (5 gallons) After 3 or 4 transfers htere was a very nice frothy head on the wort. The last pour I put the yest starter in first. I also have a very large whisk, probably over 20" long. I will...

Awakening aging yeast - longer shelf life?

I successfully used 2 year old washed yeast. I can't remember what type is it was, but I used two jars just to make sure I got things going. I tried it with another 2 yeasr old yeast, but that one didn't start up at all. So, it can be hit or miss. The next time I wash my yeast, I plan on...

    BIAB and protein rest

I just do two water additions when I do a protein rest and BIAB method. Then I risc no chances of burning a hole in the bag. I did it once, not fun. :(

    Hard cider or Apple wine

I have made both. For an easy comparison apple wine is usually fermented on the fleshy parts of tart apples along with the pectic enzymes, yeast nutrients, etc. Hard cider starts from fresh pressed cider or apple juice, no pulp or apple flesh.

    Should I dump it?

That temp from just overnight should not hurt it very much. Adjust the temp as soon as you can, and get it back down to around 70*. It will be just fine. Just make sure you take good notes now, so if it really turns out great, you'll know what to do next time.

Getting the most oxygen before pitching yeast

Well, I just started a bohemian pilsner and pitched the wort onto a yeast cake. But then I actually poured it back and forth between the two buckets, getting a very good aeration and frothey head on the wort. When I am using a yeast starter, I have about an 18inch whisk and I stir the sort...

How long can I use botttles for?

You can use them almost indefinitely. Just as long as they aren't chipped or anything like that. The big breweries reused bottles many times, back when they all used returnables.
