    As far as adding Campden and Pot. Sorbate, No, I did not add any. I know the fermentation will continue. My thoughts are that the fermentation has slowed way down so some of the flavor and aroma will be retained. I have done this with many of my fruit wines, and seems to work out well.

    Is a 8gal primary bucket really necessary for kit wine?

    I use a food grade plastic tote for primary fermentation of wines with a lot of must (grapes, rhubarb, peaches, etc) I feel it has enough surface area for the cap to float, without it getting too thick.     FWIW, I use one of my keg pouring hoses with a drilled stopper and a bottling wand. Pretty much have 0$ invested in those parts. Also get the PSI down to about 5 when filling bottles.
