    Mash temps were 152 for Indian brown ale, 156-158 for stout. No protein rests, single infusion style mash for 1 hr. no soap used on equipment. I use the sanitize cycle on dishwasher for bottles, no detergents. So maybe some soap there, but I do the same for my extract brews, and no problems...

    Headaches

    Me and my wife can't handle wheat beers. I'm a little more resilient to them, but my wife will drink one and feel hungover. So I probably won't be brewing wheat beers very much. Which is perfectly fine with me :)

    Advice for dry hopping my simcoe pale ale.

    Ok, simcoe it is! I'll order some more today! This beer was meant for some west coasters coming to visit that are hop heads, so I'll stick another 2 oz simcoe for dry hops. Thanks everyone!

    I am going to brew a simcoe pale ale all grain kit next week. Hop schedule calls for 1oz of simcoe @ 60, 20, and 2. No dry hops. However, I want to dry hop it, so what should I use? Is simcoe a good dry hopper, or should I use something else? What goes good with simcoe? I've never used it...
