    So it seems like most hold the temp high. The range for the yeast is 66-74F so I think I'll leave it at 68F(20c) until I'm ready to keg it.

    Not sure what your hop schedule is like but this happened to me before and I needed to add more dry hops as it ended up too boozy. Few ounces of hops in the keg and it was great!

    I used to do no sparge but the efficiency was lacking and unpredictable. Batch sparging is really easy and the way to go in my opinion.

    I use a very similar size and it's great. I can do no sparge 5 gallon and also 10g if you batch sparge. It's a Coleman extreme and temperature lose is no issue. Wrap the part of the lid that seals with saran wrap and cover in a blanket. Overnight mash (around 12hrs) and only lost 4-5 degrees

    Sometimes you just fall in love with an idea! After letting it settle down a bit in the keg I have changed my tune a bit. I would still do victory again but just tone it down to 2%. The beer has mellowed out really nice.

    I went with 4% Victory and I think it was just a little too much. Next time I would try 2% for a little of the nutty touch. Overall turned out great though.

    Inspired to give this a go tomorrow with a coupe adjustments. Going to go with Marris Otter and a touch of Victory malt and all EKG. Got some brew time allotted this weekend as a fathers day gift to myself!
