Irish Red Ale Raging Red Irish Red Ale

Let us know how you get on. I am enjoying a few pops right now and to tell you the truth it is getting better every day that it ages. I anticipate the second keg to be spectacular. I am brewing this one again as a repeat. Eric

Irish Red Ale Raging Red Irish Red Ale

So I think I kegged a masterpiece today. Scaled up the recipe to 11 gallons into the fermenter, 2 pounds of honey into the fermenter straight from the jars. It finished at 7.22 abv and tastes amazing without any age on it. Fermentation was my longest yet at 21 days, and brewers friend says I...

Irish Red Ale Raging Red Irish Red Ale

I brewed this 14 days ago. I chose to add the honey into the fermenter prior to pitching yeast. My OG was 1.055 before the honey addition. At day 14 it is still active! I am growing impatient lol Eric

    Transferring into kegs

Buy yourself a stainless fermenter and drill a tap 3 inches above the bottom. Racking to kegs with sanitized tubing, painless and easy. Eric

The craft beer bubble is busting.

I do not think the bubble is busting on brew pubs. I also disagree with the forbes report. Small brew pubs do better due to lower costs for product being sold at higher margins. Banks know this. Also it is harder in many areas to obtain a license to produce beer than to just sell it...

The craft beer bubble is busting.

But many restaurants like many breweries are born on a dream, not business sense or adequate funding. 90% is the industry standard for restaurant failure in the first year. I see many brew pubs doing better than that. Eric

How many square feet is your home brewery?

So I converted the boat shed to the brewery. It tallies up at 30'x30'. It has hot and cold running water, heat and air, and room to expand my current 3 vessel rig. :) Eric

    Things I have learned

Well I am coming up on 1 year of home brewing. I am the guy that went all grain right from the starting gate. I try and learn more every brew, and 100+ gallons on I am still learning. Thought I would share some insights from my young perspective. 1. Mill your own grain even if you have to...

    low carbonation

So 20 some years ago when I got off the bud train in favor of better beer, I always gravitated towards porters and stouts. In retrospect It was the carbonation that drove my taste profile. 10 months after starting to home brew, 100 gallons done. I brewed an Irish red. Choosing not to...

Irish Red Ale Raging Red Irish Red Ale

I brewed the recipe in the second post due to a grain shortage at the new lhbs. I milled my own grain for the first time and it made a huge diff. Its OG was 1.070 and has been fermenting for 4 days now. Got good color and smell and it did not taste half bad after checking the OG. Eric
