    Over carbonated?

    I've had a couple of batches come out over-carbonated. Both times, I followed the kit directions to the letter with priming sugar. My other beers I used a priming sugar calculator on have all come out perfectly carbed.

    For other places in Dallas to find beers... Lower Greenville has a few places that are worth going to again, I've found. The Blind Butcher and Dallas Beer Kitchen both have good selections of both local and non-local craft beer. The food at The Blind Butcher is pretty damn good too...

    Beer to drink in Austin and Dallas

    For me, the Dallas area the must-trys are Lakewood Temptress (Imperial Milk Stout), Peticolas Velvet Hammer (Imperial Red Ale), Community Mosaic IPA, and Revolver Blood and Honey (American Wheat). Deep Elum, Franconia, Rahr and Martin House all each have good beers, too.

    Be on the lookout for Clown Shoes Space Cake

    I tried it last night. Great aroma and nice burst of hop flavor. I agree about brewing with Mosaic soon. I thought it was a little overly boozy for my taste, though. I'll probably give it another try soon, though.

    Mississippi Beer

    Picked up a build my own 6-pack at the Smokestack, great place! Also picked up a couple of bottles of Two Hearted on the way to the Birmingham airport on my way out of town. Couldn't find any Hopslam, unfortunately.

    Congrats! I was the same way with my first one. When it came out tasting great (with some mild fusel off-flavors from a hot fermentation), I was through the roof happy!

    Drinking my first homebrew!

    My first homebrew was thr Irish Red from NB. I fermented a little hot (78-80), so it had some fusel off-flavors, but it wasn't really that bad. I was just excited when it actually tasted like beer! I also have chlorominated water, so I just switched to bottled spring water from Wal-Mart...
