    Plates wort chiller calculation

Dudadiesel has an applications requirement form that he will use to tell you which exchanger to buy: http://www.dudadiesel.com/heat_exchangers.php It is about half way down the page. I have a therminator and I could chill 35 gallons of wort in about 30 min (my water temp is 55F).

Many American pro brewers claim they use British yeast but...

I like 1968. I ferment at 62-64F for first 72-96 hours and then let the temp rise to 68F to finish.

Temp Probe too close to element?

My HLT temp probe is in a tee on the top of my mash tun so stratification in the HLT is irrelevant.

Temp Probe too close to element?

Good question. I do care about the accuracy of my strike water. I fill my mash tun with strike water and then pump it thru the herms coil until I achieve the proper mash in temp. I control the temp of the strike water as it returns to the top of the mash tun and monitor the temp as it leaves...

Temp Probe too close to element?

I do not recirculate the water in my HLT. I don't care if there is temp stratification in my HLT as I am controlling the temp of the wort as it returns to the top of the mash.

Temp Probe too close to element?

I think it will be fine, especially if you recirculate the water in your HLT. Personally, I put the temp probe for my HLT in a tee at the top of my mash tun. I control the temp of the wort as it returns to the top of the mash.

Many American pro brewers claim they use British yeast but...

Fast fermentations and many are strong flocculators. Quick turn over and clear beer. That said, even when fermenting colder, they leave a more complex flavor profile than the chico yeast.

How to determine active fermentation in a Stainless Conical?

Yes, I would use a blow-off tube for the majority of the fermentation.

    WY1968, but without the esters?

Have you tried 1968 at 64F for the first 96 hours? 1028 would be another option.

SSR heatsink- inside or outside of enclosure?

For one more data point, I have built and used two different control panels. One was 50 amp for a 30 gallon system (see pic) and the second one was 30 amp for a 10 gallon system. I put my heatsinks inside the control panel and did not install a fan. I use crydom SSRs and the appropriate...
