    I could be wrong but I thought the half life for conversion of SMM to DMS was ~30 min at 100C and pH 5.40 If I am correct, half is converted at 30 min and 75% is converted at 1 hour. 75% conversion to DMS should be sufficient providing DMS has a route of escape (evaporation).

    Is there no room for another 240 vac breaker in your subpanel? Why not add a 30 amp, 240 vac gfci breaker to your subpanel and wire a new 4 wire outlet?

    I was having the same problem. I kegged today using a spunding valve set about 2 psi lower than the fermenter pressure. It worked great - no foaming.

    My gut feeling (no data) is that 2” will work. I currently do 10 gal batches using a 1.5” steam condenser. I use the 6 gph nozzle. You will obviously need a nozzle with greater flow. Perhaps someone with bigger batch experience will comment here.
