    There are quite a few megapots being by used by others around here, and I honestly think they are really nice kettles (puts my Bayou Classic to shame) and outside of a welded coupling I can't think of anything they really lack.

    I wouldn't, it not really an acid based sanitizer like Star San that if effective as long as the ph is low enough.

    If you are going to send him to this thread, I will add this: It's just two ways to get to the same result. I do both 3 vessel and BIAB brewing, and both are great processes to enjoy home brewing. Going with either method is not a "wrong choice" - that, IMHO, is not the correct message to send.

    The interesting thing in that experiment was that the deviation from the calculated IBUs increased as the IBUs and gravity increased (from PA, to IPA, to IIPA). I hope there is a chance for us to do that experiment again, especially since I think we have found some potential impact variables...

    At the point you are at with not wanting to automate, I would look into fermentation control if you don't already have that.

    Sorry to tell you, but that puppy is likely done. You can try warming it up, it won't hurt anything, but at 80% aa, it's probably ready to package.

    What's your preferred mash pH target?

    I shoot for 5.4 typically, that gives me an error of .1 either way that I feel I don't have to stress about. I'm at the point with adjusting water for mash ph where I'm trying to get a consistent result across multiple grain bills.

    Tile and cement board so you can just hose that sucker down. And make sure you have a strong wifi signal.

    I don't think it gets treated well by a lot of distributors and liquor stores. At the brewery I was really surprised by fresh Boston lager, and they had an oyster stout that I actually enjoyed. It also goes to show that it's good there is variety, as people enjoy different tastes.
