    Oh... And use pellet hops for bittering, since you don't really know the AA of your fresh hops for sure.

    Count your fresh hops on a 7:1 ration if you're using wet hops. Dried out, probably 2:1.

    First Wit, fermentation seems over too soon

    What was the OG of this one? Over 1.060, I'd say a starter would have been ideal. Under that, you'll be fine. I've never made a starter for any of the smack packs when I've brewed anything under 1.060. Either way, you'll still make beer, and it'll be tasty.

    3 Tier System for All Grain newbies

    +2 o. This. 13 gallons for a mash tun is good (unless your doing 10 gallons of a 1.095+ OG brew). I've got a 52 qt cooler I use, and a brew I'm planning is a stone ruination 10th anniversary clone 10 gallon batch. With 40+ lbs of grist on the bill, I don't think mine can handle it!

    Brewing this up as a 10 gallon batch on Saturday with my cousin who has only done extract. I may convert him to all grain on this one. Planning on using the Safale T-58 for this one, their Belgian strain. It'll be my first Belgian of any sort.

    The bubbling at this point is most likely CO2 being released, not the active fermentation bubbles. Check the gravity a few days in a row. If no changes, I say bottle 'er up.
