    Most hops you've ever used

    18oz in an IIPA I just kegged. 6oz in the boil, 5 oz in the whirlpool and 7oz in the dry hop for a 5 gallon batch. Mostly 7-Cs and Apollo. Tastes awesome.

    Glenmorangie is a great way to start. Especially the madiera cask version. My personal favorite is Highland Park 12. Not too expensive at around $60. Very smooth and caramel forward.

    Stone IPA is hopped with Chinook, Columbus and Centennial. Ruination is Columbus and Centennial. Arrogant bastard is rumored to be all Chinook. All if those are quite citrusy. Yeah there is pine and floral in there as well. And as said earlier Lagunitas uses WLP002 for all of there beer.

    Leave the yeast. 007 is awesome in hoppy APAs and IPAs. After all, its what Stone uses and I think they know a few things about IPA. I agree about the honey malt. I would eliminate it. Using marris otter you will already have a lot of malt character. Also up the dry hop. I like 4oz in my IPAs.

    What's the worst craft brew (commercial) you've had?

    Look at the bottling date. Bells' biggest issue for me is flavor stability. Hop Slam and Two Hearted go downhill quick. Even Oberon changes. When fresh it has a big Saaz character.and tastes kind of like a Czech Pilsener. After a few weeks the hops disapeer and the beer gets pretty boring.

    Help me make the greatest IPA ever

    I would say 2-row and maybe as much as 10% Munich. Crystal doesn't belong in an IPA so leave it out. You could blend the 2-row and Golden Promise if you want. Shoot for S.G. of 1.065-1.070. Mash low, around 150. As for hopping aim for 60 IBUs. I would say 1oz at 30min, 2oz at 10 minute and 2oz...

    If you could only have one crystal malt?

    Simpsons dark crystal. It comes in at about 75L. Tons of character here. It seems to be a blend of different crystal malts. Just looking at the malt you can see different color grains. This makes the malt more complex to me.

    Considering Safale US-05

    I don't like US-05 in lighter styles like blonde ales or american wheat because that peach ester just doesn't taste right to me. That being said I used it today in a IIPA. In most beers I can't tell the difference.
